I’m bringing my lunch to work today! I tried to imitate a local grocery store’s, Mollie Stones, deli counter salad. They didn’t have the recipe on their website, but I thought I’d try it. I think it turned out pretty well. The taste is pretty similar.
I included quinoa, black beans, corn, and roasted red peppers. I also threw in some coriander seeds. Then, topped it with with olive oil, champagne vinegar, salt and pepper.
A simple, quick, and tasty lunch that is both filling and light at the same time.
